Avocado Toast with Fried Eggs (Ingredients, Equipment, Instructions) Serves 2 | Prep Time: 10 minutes | Cook Time: 15 minutes
Instructions: 1. In a small bowl, whisk together 1 tablespoon of oil, lemon juice, a pinch of salt, and a pinch of pepper. 2. Use a butter knife to cut the avocado in half, remove and discard the pit, then scoop the avocado flesh into the bowl with the lemon dressing. Discard the skin. Use a fork to break the avocado into large pieces and mash it into the dressing until mostly smooth. 3. Toast the bread in a toaster until golden on both sides, about 1 to 2 minutes. Spread the avocado mixture evenly onto the toasts. 4. In a 10-inch non-stick skillet, heat the remaining 2 teaspoons of oil over low heat for 5 minutes. Meanwhile, crack the eggs into a second small bowl and add a pinch of salt and pepper. 5. Increase the heat to medium-high and heat the oil for 1 minute (the oil should be hot but not smoking). Quickly pour the eggs into the skillet, cover, and cook for 1 minute. 6. Turn off the heat and slide the skillet to a cool burner. Let it sit, covered, for about 1 minute for slightly runny yolks or about 2 minutes for set yolks. 7. Use a spatula to transfer one fried egg to each toast. Serve.
